On Sunday night I made our favorite shredded beef recipe...which I've mentioned on this blog before! Last night I decided to use the leftovers for enchiladas. I searched for a basic enchilada recipe online and then just tweaked it for us and here's what I came up with:
Cover bottom of a baking pan with enchilada sauce.
Combine and melt 4 oz cream cheese and 1 cup salsa on the stove. When well melted add the beef and warm completely.
Fill corn tortillas with beef mixture, roll up and place in pan. Drizzle enchilada sauce over the top and sprinkle with cheese.
Cover with foil and bake at 350 for about 25 minutes!
These were DELICIOUS. And we had enough leftover for another meal. PLUS we still have enough beef for taquitos! Talk about a meal that stretches...
